Today's Dish: Pork Caldereta


  
Caldereta is a Filipino dish adapted from the Spaniards. It is a spicy cheesy meat dish with veggies. More commonly this dish is cooked using beef, but since we only have pork I opted for that. Other meat variations are chicken and lamb. For my veggie combination, I used carrots, potatoes and petchay. You can also add bell pepper, olives and green peas. The sauce is made using tomato and liver paste. It is then topped off with grated cheddar cheese allowed to melt over the heat.
